Salt & Pepper

Chives

Olive Oil

Goat Cheese Ricotta or Cream Cheese

Pesto

Slice the tomatoes 1/4-inch thick.

Arrange the tomatoes on a parchment paper-lined sheet pan.  Drizzle with olive oil and season with salt and pepper.

Roast the tomatoes until they are wrinkled and have deepened in color, about 30 minutes.

While the tomatoes are in the oven, toast the bread.

To make the spread, stir together the cheese and pesto.

To assemble, slather the pesto cheese spread on the bread. Add the roasted tomatoes and garnish with minced chives.
