Vegetarian Tortellini Pasta Bake

Kalamata Olives

Preheat the oven to 400 degrees F. Toss the broccoli with olive oil, salt and pepper. Roast until bright green, about 10 minutes.

Stir together the tortellini, tomato sauce, diced tomatoes, olives, spinach and half the cheese in a large bowl.

Spread tomato sauce all over the bottom of the baking dish.

Spoon the tortellini, olives, and spinach into the dish.

Add the roasted broccoli on top of the pasta, olives and spinach.

Dollop the remaining tomato sauce on top.

Sprinkle shredded cheese over the pasta bake. Then cover the dish with aluminum foil.

Bake until the cheese has melted and the tortellini is al dente, about 20-25 minutes.

Turn the broiler on high. Remove the foil from the dish. Then lightly brown the cheese under the broiler. Sprinkle with parsley before serving.
