Mushroom Asparagus Udon Noodle Stir-Fry


Soy Sauce

Red Pepper Flakes Salt Black Pepper



Udon Noodles


Garlic Ginger


Vegetable Oil

Cook the udon noodles according to package instructions. Rinse with cold water in a colander.

Heat the olive oil in a skillet or wok over high heat.

Sauté the mushrooms for a few minutes.

Add the asparagus and continue sautéing for 3 minutes until the asparagus turns bright green.

Add the peas. Sauté the vegetables for 2-3 minutes.

Stir in the garlic, ginger, white parts of the scallions, red pepper flakes, salt and pepper.

Fold in the udon noodles and pour in the soy sauce. Stir the veggies and noodles together.

Finish the stir-fry with green scallions and sesame seeds.
