Vegan Creamy Avocado Pasta


Pasta (Bucatini, Spaghetti, or Fettuccine)

Red Pepper Flakes Salt & Pepper

Cook the pasta until al dente according to package instructions. Save a 1/2-cup pasta cooking water before draining and transferring the pasta to a big bowl.

Combine the avocado, garlic, red pepper flakes, salt, pepper, arugula, lemon juice and olive oil in a food processor.

Puree the ingredients until it the sauce is smooth and fully combined.

Stir the sauce into the pasta with a splash of the reserved pasta cooking water. Garnish it with chopped fresh herbs before serving the pasta.
