Mushroom Pepper Feta Crustless Quiche

1. Make the filling

Sauté the shallots, mushrooms, roasted red peppers and garlic.  Stir in the arugula and parsley.

2. Whisk the eggs

Combine the eggs, milk, salt & pepper.

3. Assemble the quiche

Spread two-thirds of the filling into a pie dish with half the feta.

Pour in the egg mixture and top with the remaining filling and feta.

4. Bake the quiche.

Sprinkle with parsley and cut into wedges to serve.
