Lemon Pepper Grilled Cauliflower Steaks Recipe

Smoky with fresh lemon juice, these simple grilled cauliflower steaks are finished with toasted pine nuts and chopped parsley.

Ingredients

  • 1 large head cauliflower, about 2-1/2 pounds, or 2 small heads
  • Juice of 2 lemons
  • 1 tablespoon whole grain mustard
  • 1 teaspoon honey or maple syrup
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1/3 cup olive oil
  • 1/4 cup toasted pine nuts
  • 1 tablespoon chopped parsley

Instructions

  • Preheat a gas or charcoal grill on medium heat.
  • Remove the leaves and trim off the bottom stem of the cauliflower. Half the head lengthwise down the center. Then starting at the larger side of one of the halves, cut into 3/4-inch-thick slices. (Some of them will break apart into small to medium pieces. You can still grill them as long as they are wide enough that they won’t fall through the grates).
  • In a small bowl, whisk the lemon juice, mustard, honey, garlic powder, salt, pepper and olive oil.
  • Brush the cauliflower on both sides with the marinade. There should be some left in the bowl to drizzle on the cauliflower after its grilled.
  • Grill the cauliflower for 4-5 minutes per side until it has grill marks. It should be crisp tender with browned edges.
  • Spoon the remaining marinade over the grilled cauliflower and top with toasted pine nuts and parsley.

Notes

To make the recipe vegan, use maple syrup in the marinade instead of honey.
You can substitute chopped almonds or walnuts for the pine nuts.
Store leftovers in an airtight container in the refrigerator up to 3 days. You can warm them in a 350-degree F oven. The cauliflower will lose some of the bite it had when you first grill it. Or chop the cauliflower and eat it cold in a salad.
If you don’t have a grill, you can cut the cauliflower into steaks, brush it with marinade and roast it on a sheet pan in a 425-degree F oven for 20-25 minutes until browned at the edges, flipping halfway through roasting.
